2-3 pounds frying chicken cut-up
1 T curry powder
1/4 tsp. ginger powder
1 medium onion, chopped
1 green apple (Granny Smith) chopped
1/2 cup raisins
Rice (Basmati)
salt and pepper (optional)

Directions:
Directions:
Sprinkle curry and ginger on bottom of large microwaveable dish. Place chicken in dish, skin down. Sprinkle with salt and pepper, if desired. Top with onion, apple and raisins.
Cover and microwave for 20 minutes on HIGH. Turn chicken over and cook on HIGH for another 5 minutes uncovered.
Serve over rice.

Condiments: Watermelon rind and Mango Chutney or other chutneys as desired. Add curry powder to taste.
