2 C. corn (canned, frozen, or fresh)
C. evaporated milk
C. butter
1 medium onion, minced
1 C. crushed saltine crackers or untoasted bread crumbs
1 t. salt
t. pepper

Directions:
Directions:
In a saucepan, heat milk, of butter, and onion. Place 1 C. of crackers/bread crumbs in a 2 quart baking dish. Pour milk/onion mixture over the top. Add corn and seasonings and mix lightly until blended. Melt other of butter and mix with remaining C. crackers/bread crumbs. Sprinkle over top of corn mixture. Bake in preheated over at 375 for about 30 minutes, or until top is golden brown.
