2 chicken breasts
2 eggs
1/2 cup cornstarch
6 mushrooms
1/4 cup sugar
1/2 teaspoon black pepper
1 carrot shredded
1/4 c pineapple chunks
1 red hot pepper (optional)
1/2 green pepper

Cut chicken into 1 inch chunks, roll them in the eggs and cornstarch and fry the pieces until golden. Place on a platter. Remove all but 1 tablespoon oil from wok or frying pan. Stir-fry the mushrooms, hot pepper, green peppers, carrots, pineapple.
Make the sauce: 1 tablespoon grated lemon juice
1/2 c chicken broth
1 tablespoon vinegar
1 tsp soy sauce
1/4 c sugar
1 tablespoon corn starch

Add the sauce to veggies, dissolving cornstarch in chicken broth before adding. Cook until thickened and pour over chicken. Serve with rice.

Garnish with cucumber and lemon peels.
Important note - Marinade the chicken cubes in following marinade before frying and leave an hour or more.

1 tsp salt
1 tablespoon soy sauce
