1 cup boiling water
1 cup chopped dates
1 tsp baking soda
1 cup sugar
2 eggs
1 tsp vanilla
1 1/2 c flour
1 tsp baking powder
1/2 tsp salt

Directions:
Directions:
Pour boiling water over 1 cup dates and add 1 tsp baking soda and let stand.
Alternately stir thirds of flour mixture and half the date mixture into the sugar and egg combination.
Start with the flour mixture ... fold in 1/2 cup chopped nuts. Pour into 9 X 12 pan and bake 35 minutes at 375 degrees.

Leave in pan and frost with icing.
Icing: 7 tablespoons brown sugar, 5 tbls milk or cream, 2 tbls butter. Boil hard 3-4 min. It will seem wet, but spread on warm bread. Sprinkle with coconut (optional).
