1/4 c. vegetable oil
1 lb. or 4 c. zucchini, thinly sliced
1 large carrot (1 c.), coarsely grated
1 c. chopped onion
3/4 c. chopped celery
1/2 medium green pepper, cut in thin strips
1/2 tsp. garlic salt
1/4 tsp. dried basil
pepper and salt to taste
1/3 c. taco sauce
2 tsp. mustard
2 medium tomatoes
Grated sharp cheddar or mozzarella cheese

Directions:
Directions:
Heat oil in 10" skillet. Add Zucchini, carrot, onion, celery, green pepper, garlic salt, basil, and salt and pepper to taste. Mix well. Cover and cook over medium heat for 4 minutes, stirring occasionally. Combine taco sauce and mustard. Stir into vegetables. Add 2 medium tomatoes, cut into wedges. Cook uncovered for 3-5 minutes. Transfer to serving dish and sprinkle with grated sharp cheddar or mozzarella cheese.
