1 lb ricotta cheese
3/4 c uncooked rice
1 pkg. frozen chopped spinach
5 eggs
1 cup Parmesan cheese
1 tsp. salt.
1/8 tsp black pepper
1/3 c almonds slivered
2 tbls. oil
1/4 c bread crumbs

Directions:
Directions:
Cook rice. Cook spinach and drain well. Beat eggs and reserve 3 tbls. of the eggs for later. Salt and pepper to taste. Mix rice, spinach, ricotta and Parmesan cheese. Put oil in baking dish and sprinkle with bread crumbs. Add mixture. Brush with the 3 tbls. of eggs that you reserved. Sprinkle with almonds and bake for 30 minutes at 350 degrees.

Use 9 x 13 baking dish. Almonds are optional. Can also use chopped parsley to ricotta mixture for added flavor.
