12 corn tortillas
1 1/2 pounds hamburger meat
1 onion, chopped
2 c grated cheddar cheese
Enchilada Sauce: 1/3 c vegetable oil
1 T garlic powder
3 T flour
2 T chili powder
1 1/2 c hot water, divided
1/2 t salt

Directions:
Directions:
Combine hamburger meat and onion and cook until done. Cook tortillas in pan on top of stove to soften. Take 1 corn tortilla fill with hamburger meat mixture, add grated cheese, roll up and place in 8x11 pan. Continue filling tortillas and placing side by side in pan.

Enchilada Sauce: Combine oil, garlic and flour in medium saucepan; cook over low heat, stirring constantly, until mixture is slightly browned. Dissolve chili powder in 1/4 c hot water; stir into flour mixture. Add remaining 1 1/4 c hot water, stirring constantly. Stir in salt. Cook over low heat 5 minutes, stirring often.

Pour enchilada sauce over top of enchiladas. Top with remaining hamburger meat and grated cheese. Cook in 350 degree oven for 25 minutes.

I spray a piece of foil with Pam and put on top, so they don't get crispy on the edges.
