1/4 c butter
1/4 c all-purpose flour
1/2 t salt
1/2 t pepper
2 c milk
1 c shredded cheddar cheese
5 c baking potatoes, peeled and thinly sliced
1/2 c sweet yellow onion, chopped

Directions:
Directions:
Preheat oven to 350 degrees. In a large saucepan, melt butter over low heat. Make a roux by stirring together flour and seasoning with a wire whisk. Gradually whisk in milk. Bring to a boil and stir constantly for 1 minute or until thickened. Immediately remove from heat and stir in cheese until melted. Coat a 13 x 9 x 2 baking pan with cooking spray. Add sliced potatoes and sprinkle onions over. Evenly pour sauce over. Cover and bake for 1 hour or until potatoes are fork tender. uncover and bake for a few minutes until top browns.
