1 C. redcurrants
1/2 red onion, peeled
1/2 red chile, seeds removed (or a whole one if you want it spicier)
Juice and zest of 1/2 a lime
Salt & Pepper

Directions:
Directions:
Place all the ingredients in a food processor and pulse approx. 5 times so that you have a salsa-like consistency. Season to taste.

Tips:
If you don't have a food processsor, simply chop the onion and chile finely, half the red currants and add to a bowl along with the lime zest and juice. Season to taste.
