4 skinless chicken breasts 1 egg 1/4 cup bread crumbs 1/2 cup ground almonds salt & pepper to taste 2 tbls olive oil 1 tbls butter
Beat egg in bowl. Mix bread crumbs and almond crumbs together and spread on wax paper. Dip chicken in egg and coat with crumbs. Heat oil and butter in frying pan at medium heat and add chicken. Cook until browned - about 15 - 20 minutes.
