1 pkg. (6 oz.) Uncle Benís long grain and wild rice original recipe
1/4 cup butter or margarine
1/3 cup onion, chopped
1/3 cup flour
1 tsp. salt
Dash of black pepper
1 cup half and half
1 cup chicken broth
2 cups cooked chicken, cubed
1/3 cup pimento, diced
1/3 cup fresh parsley, chopped
1/4 cup chopped almonds, slivered

Cook contents of rice and seasonings packets according to package directions. While rice is cooking, melt butter in a large saucepan. Add onion and cook over low heat until tender. Stir in flour, salt and pepper. Gradually stir in half and half and chicken broth. Cook, stirring constantly, until thickened. Stir in chicken, pimento, parsley, almonds and cooked rice. Pour into a greased 2 quart casserole. Bake, uncovered, in a 400 degree oven for 30 minutes. Makes 6 to 8 servings.
