2 boneless chicken breasts, skinned and halved
1/4 cup oil
1/4 cup soy sauce
1/4 cup sugar
1/2 tsp. grated fresh or 1/4 tsp. powdered ginger

Directions:
Directions:
Place chicken breasts in boiling water to cover and parboil for 30 seconds. Drain. Heat oil in frying pan over medium-high heat. Add chicken and cook until browned on both sides. Pour off oil. Add soy sauce, sugar and ginger to pan with chicken. Cover and simmer until sauce has consistency of syrup. Serve chicken with rice; spoon sauce on top. Serves 2.
