3 or 4 boneless skinless chicken breasts, cubed
3 tbsp. butter, divided
1 tbsp. olive oil
Salt
Pepper
2 tbsp. garlic, diced
1/4 cup Grand Mariner Liqueur
Juice of 2 oranges (about 1-1/2 cups)
1/4 cup cream

Directions:
Directions:
Brown chicken in skillet with 1 tbsp. butter, olive oil, salt and pepper. Remove chicken from pan. Put garlic and Grand Mariner in skillet to deglaze skillet. Be sure to scrape pan to loosen all brown bits. Simmer to reduce to almost nothing. Add orange juice, simmer to reduce by half. Add 2 tbsp. butter, one at a time. Temper cream by adding small amount of hot juice mixture to cream. Slowly stir cream into pan. Simmer while stirring until slightly thick. Salt to taste. Put chicken back into skillet to heat. Serves 4.
