6 - 8 chicken thighs or 4 leg quarters
1/2 cup onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes
12 corn or 8 flour tortillas, cut in 1/4ths
Grated cheddar cheese (you determine amount to use)

Boil chicken, debone it and set aside. Keep all chicken stock to use later. In large saucepan add onion to 1/2 cup chicken stock. Cook until onion is clear. Add soups and Rotel to this mixture and heat. After heating, add chicken pieces and keep warm. Dip tortilla pieces in rest of hot chicken stock to soften. In large rectangular baking dish, arrange layers of tortillas, chicken and soup mixture. Cover with grated cheese. Bake uncovered at 375 degrees for 30 minutes or until bubbly and cheese is melted.
