3 eggs
1 cup cooking oil
1 cup sugar
2 tsp. vanilla
2 to 2-1/2 cups zucchini, grated
3-1/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
1 to 1-1/2 cups nuts, chopped

Directions:
Directions:
Beat together eggs, oil, sugar and vanilla. Add zucchini, flour, baking powder, soda, cinnamon and salt. Stir well. Add nuts to mixture. Bake in loaf pan(s) at 350 degrees for 1 hour. Cool 10 minutes. Remove from pans. Makes 2 loaves.
