2c all-purpose flour
1/4 c sugar
1tsp baking powder
1/4tsp salt
1/2c butter, cold & cut into small pieces
1/2c crystalized ginger, chpd into small pieces
zest of 2 lemons
2/3c buttermilk

Egg wash: 1 lge egg, slightly beaten
1tblsp milk

Preheat oven to 400. Place rack in middle of oven.

In lge bowl whisk tog flour, sugar, baking pwdr, baking soda and salt
Cut butter into small pieces and blend into flour mixture with pastry blender until mix looks like small crumbs
Stir in ginger and lemon zest
Add buttermilk to flour mix and stir just until the dough comes together
Transfer to lightly floured surface and knead dough gently 4/5 times (do not over-knead)
Pat dough into a circle about 7" around
Cut circle in half then cut each half into 3 pie-shaped wedges.
Apply the egg wash an sprinkle with sugar
Bake for 20-25 min until golden brown
