garlic-1 whole clove head
olive oil to cover bottom of pot
carrots- 2 med or 1 large diced
celery- 2 sticks diced
onions- 1 large
1 bag lentils
1 1/2 c rice
1 Tbls. basil
Salt and pepper to taste, but cook with salt in the water- about 2 teaspoons
1 bag lentils
1 1/2 cup rice

Directions:
Directions:
Saute garlic, celery, onions, carrots in the oil. After it is tender, add water to stock pot 3/4 full. Add the lentils only after parboiling them for 20 min. and drained. Cook the lentils and veggies about 45 mins. Then add rice and cook about 20 mins. Serve with grated cheese.

You can add tomato sauce (sm. can) to this recipe for color. If more flavor is needed, add chicken stock or chicken soup base.
