Spiced Shortbread Crust:

1 cup flour
5 Tbsp brown sugar
cup butter
tsp cinnamon
tsp nutmeg
tsp ginger

Cheesecake:

24 ounces (3 bars) cream cheese, softened
3 eggs
cup sugar or brown sugar
cup milk
2 cups finely chopped/crushed walnuts
1 cup maple syrup
1 Tbsp cinnamon
1 tsp vanilla
1 tsp nutmeg
1 tsp clove
cup flour

Spiced Shortbread Crust:

Combine flour, brown sugar, and spices in a medium mixing bowl. Cut in butter. When mixture resembles fine crumbs, pour into 9-inch spring-form pan and pack down to form a thin bottom crust. Also, form crust up the sides of pan, if desired. Put crust in oven at 375 for 10-15 minutes to harden slightly.

Cheesecake:

In a large mixing bowl, beat eggs along with sugar, milk, cinnamon, vanilla, nutmeg, and clove. Add softened cream cheese, and with an electric mixer, mix thoroughly at low-medium speed. Sprinkle in flour evenly, and then add crushed walnuts to mixture. Mix at medium speed for 1-2 minutes to achieve best consistency.

Pour mixture into crust, and place in oven preheated to 375. Bake for 50-60 minutes, or until a knife inserted into center of cheesecake comes out clean.

To make ordinary graham crust instead, mix 1 cups crushed graham crackers and cup melted butter. Pour mixture into spring-form pan and pack down. Pre-bake as above, if desired.

For a garnish, sprinkle a mixture of crushed walnuts and red sugar on top of chilled cheesecake.)
