3 c sugar
1/2 c water
1 t vanilla extract
3/4 c light corn syrup
2 egg whites
1 c chopped nuts (pecans preferred)

Directions:
Directions:
Put sugar, corn syrup and water in heavy saucepan
Over medium heat, cook to hard ball stage (248)
Remove from heat and let stand until temp drops to 220 without stirring
Beat egg whites until soft peaks form
Gradually add half of syrup in a sine stream
Cook remainder of the syrup to 272
Add this to mixture, beating constantly
Remove and add extract
Continue beating on high for 20-25 minutes until mixture starts to become dry
Stir in nuts, mixing only until blended
Drop mixture by spoons full into greased wax paper to form patties
