"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
4 - 6 tablespoons cocoa 1/4 pound unsalted butter 1 cup granulated sugar 2 eggs 1/2 teaspoon vanilla 1/4 cup all-purpose flour 1/4 teaspoon salt
Heat the oven to 325 º. Butter an 8 inch square baking pan. In a heavy saucepan, melt the chocolate with the butter over low heat, stirring until completely melted. Remove from the heat and stir in the sugar. Add eggs and vanilla and "beat it all like mad." Stir in flour, salt and mix well. Spoon the batter into the prepared pan and bake for 40 minutes. Take it out; let it cool; cut into squares and go CRAZY.
