1 lb. package of Jimmy Dean's maple flavored sausage

3 T. butter
1/4 c. all-purpose flour
3 c. whole milk, or half and half
salt and pepper to taste

Directions:
Directions:
Place sausage in a large, deep skillet--cast iron works best. Cook over medium-high heat until evenly brown. Remove sausage with a slotted spoon, leaving the drippings in the pan. Stir in the butter until melted. Add flour, and stir until smooth. Reduce heat to medium, and cook until light brown. Gradually whisk in milk, and cook until thickened. Season with salt and pepper, and stir in cooked sausage. Reduce heat, and simmer for 12 to 15 minutes. If gravy becomes too thick, stir in a little more milk. Serve over hot biscuits. Very fattening and good!

Our family never ate biscuits and gravy at home. However, when Nate worked at Bob's Ranch House he learned to make it, and it became his favorite breakfast standard. Even today, when we eat out for breakfast, he always orders eggs, hash browns, biscuits and gravy--requesting the waitress to make sure the gravy is poured over everything! (Well, sometimes he orders chicken-fried steak, with the gravy poured over it and everything...)
