2 c. sugar
1 c. oil
4 eggs
1 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1 tsp. vanilla
2 c. flour (1 c. whole wheat, 1 c. white flour)
2 tsp. cinnamon
1 c. raisins
3/4 c. chopped walnuts
3 c. grated carrots

Directions:

Preheat oven to 350. Cream sugar and oil with mixer, add eggs and vanilla, mix. In a separate bowl combine flours, cinnamon, baking soda, salt & nutmeg. Toss raisins and nuts in 2 tbsp. dry ingredients. Stir remaining dry ingredients into creamed mixture, mix. Fold in raisins, carrots and nuts. Pour into greased and floured 13 x 9" pan. Bake for approximately 50 minutes, until toothpick in center comes out clean.

I use this mix for muffins (with confectioners sugar drizzle icing - see banana bread recipe). When I make it as a cake I use 2- 9 inch pans and make it as a layer cake.
Cream cheese icing recipe will follow, but I often use pre-mixed store-bought icing which is lighter.
