3 pounds of whole boneless chicken breasts
1 c creme frailer or heavy cream
1 c sour cream
1/2 c mayo
2 celery stalks, chopped
1/2 c shelled walnuts
1 T crumbled dried tarragon
salt and pepper to taste

Directions:
Directions:
Arrange chicken breasts on baking sheet and spread evenly with creme fraiche (see recipe in notes below)
Bake in preheated 350 oven for 20-25 minutes, or until done
Shred meat into bite sized pieces and add to a bowl
Whisk sour cream and mayo together in a separate bowl and add to chicken
Add celery, walnuts, tarragon, salt and pepper and toss well
Chill for at least 4 hours

Creme Fraiche - Whisk 1 c of heavy cream with 1 c sour cream. Cover loosely and let sit in a bowl overnight in the kitchen - not in fridge. Let it stand until it thickens. Cover and refrigerate for 4 hours.
