10 slices bacon, drippings reserved
1/2 cup flour
1 onion, diced
3 cloves garlic, diced
1 can stewed tomatoes
2 Tbsp tomato paste
1/2 cup milk
1/2 can beef stock
salt and pepper to taste
Buttermilk biscuits

Directions:
Directions:
Cook bacon and set strips aside. Make a dark roux with the bacon grease and flour. This can take anywhere from 20-30 minutes. Add onion, and garlic to the roux and cook until onions are translucent. Add stewed tomatoes, salt and pepper. Cook for 10 minutes. Add in the milk, beef stock and tomato paste. Simmer until gravy thickens. Serve over buttermilk biscuits with bacon.
