2 (3 ounce) packages lime flavored gelatin mix
2 cups boiling water
1 (8 ounce) package cream cheese, softened
1 cup Miracle Whip or mayonnaise
1 medium cucumber, peeled and chopped
1 dill pickle
1 Tablespoon grated onion

Directions:
Directions:
Pour the gelatin mix into a medium bowl, and stir in the boiling water until gelatin is completely dissolved. Set aside to cool slightly.

In a blender or large food processor, combine the cream cheese, salad dressing, cucumber, pickle, and onion. Process until fairly smooth. Stir into the gelatin mixture. Pour into a mold, or leave in the bowl. Refrigerate for 6 hours, or until firm. Can be made one or two days ahead.

Okay, call me crazy, but I love this fresh, not-too-sweet salad, either in the hot summer, or at a festive meal where something light tastes good. Many people enjoy it until they hear what went into it...sort of like sausages, I guess...so I just say I can't tell, because it's an old family secret.
