Ingredients:  
1 mango, peeled and finely diced
cup finely diced red onion
cup finely diced cucumber
tsp lemon rind
2 Tbsp of lime juice
tsp ground cumin

Directions:
Directions:
1.Cut up mango, onion, and cucumber and place in a bowl.
2.Add lime rind, lime juice and cumin.
3.Cover and let stand for 1 to 4 hours in the refrigerator.

Serve with your choice of meat. This is a substitute for gravy.
You can also eat this salsa with taco chips.
Also try pineapple or peppers in the salsa.
