1 chopped onion
1 chopped carrot
1 chopped stalk celery
2 cans chipotle peppers in adobe sauce
1 pound lean ground turkey or chicken
1/2 cup quick oats
2 egg whites

Topping
1/4 c sugar free ketchup
1T chipotle pepper in adobe sauce
1T brown sugar (splenda)

Directions:
Directions:
Preheat oven to 350 F. In processor pulse onion, carrot, celery, and peppers. Add to ground turkey. Gently mix in oats and eggs. Place mixture in sprayed muffin tins. Put on topping. Makes 9 meat loafs Bake 20 minutes. They may need 5 more minutes. Each muffin is 110 calories.
