Espresso Syrup:
1/3 c. water
1/2 c. sugar
2/3 cup brewed (twice) strong coffee
1/4 c. brandy

Mascarpone Filling:
1 1/2 c. heavy whipping cream
1/3 c. sugar
2 tsp. vanilla extract
1 lb. mascarpone cheese, softened to room temperature
1/2 lb. or 2 packages Ladyfingers
Cocoa powder
Fine chocolate shavings

Directions:

SYRUP: Combine water and sugar in a small saucepan. Bring to a simmer, stirring occasionally to dissolve sugar. Remove from heat and add coffee and brandy. FILLING: Whip cream with sugar and vanilla until soft peaks form. Fold cream into softened mascarpone. ASSEMBLY: Place a layer of ladyfingers in the bottom of a shallow 2-quart baking dish. Sprinkle with half the syrup. Spread with half the filling. Sprinkle cocoa powder and chocolate shavings to evenly cover filling. Repeat layering with remaining ladyfingers, syrup, and filling, spreading the top smooth, using a metal spatula. Sprinkle more cocoa powder and chocolate shavings to evenly cover top. Cover with plastic wrap and refrigerate to chill completely before serving.
