Panko bread crumbs
4 chicken breasts
1/2 lb prosciutto (sliced very thin)
10 oz mozzarella (not shredded)
Olive oil

Directions:
Directions:
Butterfly the 4 chicken breasts and pound them about 1/4 inch thick, enough to make them stuffable and foldable. Layer the chicken breast with 2 oz of proscuitto each, covering the surface of the chicken evenly. Layer one-quarter of the mozzarella on one side of the chicken breast. Fold the chicken breast over to seal the meat and cheese into the chicken, and secure the flaps with twine or toothpicks. Rub each chicken breast with olive oil (just enough to make the bread crumbs stick, but not to make them soggy), and brush with the bread crumbs. Do this a couple times to maximize the bread crumbs on each piece of chicken. Place into a foil-lined pan, cover with foil, and bake for 15 minutes on each side at approximately 450 degrees. Lastly, eat it like it's going out of style!
