1 13-oz. can sweetened condensed milk
1 5-oz. can evaporated milk
1 tsp. vanilla

Directions:

Cook the sugar in a saucepan, using a wooden spoon. When the sugar is frothy and turns light brown, pour it into an 8-inch round metal pan, turning the pan quickly to spread the sugar evenly.

Or heat the pancake syrup in a saucepan until it is frothy, then pour it into an 8-inch round metal pan, turning the pan quickly to spread evenly.

Blend the eggs very well several minutes at medium speed in a blender. Then, leave the blender running while you add the evaporated milk, the condensed milk and the vanilla.

Pour the egg mixture into the mold containing the sugar layer.

Set the metal pan in a water bath. (Put it inside a larger pan and fill the larger pan with water.) Cook at 350 degrees for up to an hour. Test at 45 minutes. If a toothpick inserted into the flan comes out clean, it is done.

Remove the pan containing the flan from the water bath and let it cool completely, preferably overnight. When it is cool, put a serving platter on top of the pan and flip them over. Serve at room temperature.
