2 1/2 quarts (15-17 medium) sliced tomatoes
3/4c. chopped onion
3-inch piece of cinnamon stick
1tsp. whole cloves
1 small garlic clove, chopped
1c. vinegar
1 1/4tsp. salt
1/2c. sugar
dash of cayenne pepper
1tsp. paprika

Directions:
Simmer tomatoes and onions for 20-30 minutes. Press through sieve. Put cinnamon and garlic into a spice bag; add it to vinegar and simmer 30 minutes. Remove spice bag. Boil tomato mixture rapidly until half original amount is left; stir often. Add spiced vinegar, sugar, salt, paprika and cayenne pepper to tomatoes. Boil rapidly until slightly thickened; about 10 minutes. Pour into hot sterilized jars and seal.
