3-4 Mahi filets
3 tbsp. honey
3 tbsp. soy sauce
3 tbsp. balsamic vinegar
1 tsp. fresh grated ginger root
1 clove of garlic crushed
3 tsp. olive oil
salt and pepper to taste

In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger and 2 tsp. olive oil Season Mahi Mahi fillets with salt and pepper, and place them into the dish.
Cover and refrigerate for 20 min. to marinate. Heat 1 tsp. olive oil in a large skillet over med-high heat. Remove fish from the dish and reserve the marinade. Saute fish for 4-6min. on each side, turning only once until fish flakes easily with a fork.
Remove Mahi to a serving platter and keep warm. Pour reserve marinade into the skillet, and heat over med. heat until the mixture reduces to a glaze consistency.Spoon over fish
