1 cup butter, melted (no substitutes!!)
2 eggs, separated
1 1/2 cups milk, lukewarm
2 tsp. vanilla
2 cups flour
3/4 cup sugar
3 1/2 tsp. baking powder

Directions:
Directions:
Place egg yolks in large mixing bowl, reserve the whites in a medium mixing bowl. Add melted butter, milk and vanilla, whisk until well blended. In another bowl combine dry ingredients; combine with egg mixture a little at a time, stirring well after each addition. With an electric mixer whip egg whites until stiff peaks form; gently fold into batter.
Preheat waffle iron according to manufacturer's instructions on desired setting. Ladle batter onto hot iron and cook until a deep golden brown. Place finished waffles in a warm oven directly on rack or on warm pizza stone to hold while others are cooking.
Serve with fresh fruit (strawberries, blueberries, sliced peaches, etc.) whipped cream, powdered sugar, maple syrup, or any combination of desired toppings.

These are SO worth the effort!! I usually bring my oven to a low heat and then turn it off so they don't get baked again. They get extra crispy this way, too. If you don't prefer them crispy, just remove to a platter.
