1 stick margarine (Smart Balance makes a healthier one)
1/2 diced onion
2 cans consommé soup
1 cup rice (uncooked)

Directions:
Directions:
Melt the margarine in a skillet and add onion and rice. Brown in the skillet. Empty the contents into a 13 x 9 inch pan - glass works best. Add the cans of soup to the pan and cover with foil. Cook covered at 375º for 45 minutes.
