Zucchini Pancakes Recipe

3 Cups of zucchini (Grated)
4 Eggs
1/2 cup flour
1/2 cup Parmesan cheese
1/2 1/2 cup mayonnaise
1/4 cup shallots chopped
1 tsp. lemon juice
Oil for frying and some butter
add a little salt and pepper for seasoning


Place grated zucchini between layers of paper towels and press to get as dry as possible.

Mix together all the ingredients and mix till batter becomes smooth.

Heat oil and a little butter in fry pan and when hot put about 2 tspb. of batter into oil and fry till crisp. You may have to add a little more oil and butter as you make more. Serve with sour cream
