Ingredients: 2 sticks unsalted butter at room temperature 1 1/2 cups sugar 1 tsp vanilla extract 2 eggs 2 cups creamy peanut butter 3 cups flour 1 tsp baking powder 1 1/2 tsps. salt 1 1/2 cups (18 ounces) jam 2/3 cups chopped peanuts

Directions:Preheat oven to 350 degrees. Grease 9x13 cake pan. Line with parchment paper. Then grease and flour the sides of the pan.
Cream butter and eggs until light yellow about 2 minutes. Add the vanilla, eggs and peanut butter and mix until all ingredients are combined.
In a small bowl, sift the flour, baking powder and salt. With the mixer on low speed, slowly add the flour mix to the peanut butter mixture. Mix until just combined.
Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if the jam is not all covered, the dough will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares. |

Notes: This is so good. It is an Ina Garten recipe from her Food Network TV show. There is a lot of dough. If you have a 10 x 14 inch pan use it in place of the 9 x 13.
