2 Eggplants peeled and diced
1 onion chopped
1green pepper chopped
4 cloves garlic minced
1/4 cup olive oil
1 can shrimp soup
1 tsp of herb seasoning
tony's seasoning to taste
Parm Cheese
Panko crumbs
Paprika

Add Ons: Rotel tomatoes, tomato soup, olives (black or green), Shrimp, Crabmeat, bakes chicken beastas, and sausage

Directions:
Saute eggplant in olive oil. Add onions, peppers, and garlic. Add soup. herbs, tonys.Pour into buttered cassorole dish. Sprinkle with parm cheese on top. Sprinkle panko crumbs inbetween layer in dish. Sprinkle paprika on top.
If you are adding any add ons add before puring into dish. Bake at 350 for 30 min. Cover with clear wrap and then foil. After 30 minutes take foil and clear wrap off and bake for 10 more minutes.
