2 tsp grated orange rind
1/2 c shortening
6 T orange juice
4 or 5 fresh Bartlett pears
2/3 c sugar
2 T cornstarch
1 T butter or margarine

Directions:
Directions:
Mix flour, 1/2 tsp salt, and 1 tsp orange rind. Cut in shortening until mixture resembles coarse meal. Add 3 T orange juice; toss to moisten. Press 1/4 of mixture into ball; cover and set aside. Press remainder into ball and roll on floured into a 12 inch circle. Fit into 9 inch round layer cake pan with removable bottom, allowing pastry to extend about 1 inch up sides of pan. Flute edge. Pare, halve, and core pears. Reserving 1 pear, dice remainder to make 4 cups. In saucepan, combine diced pears, sugar, cornstarch, butter, 1/4 tsp salt, and remaining 1 tsp orange rind and 2 T orange juice.
Cook, stirring frequently until mixture boils; reduce heat and cook 5 minutes. Turn into pastry-lined pan. Dice reserved pear; arrange over fruit mixture. Roll reserved pastry into 14x 2 1/2 inch strip. Cut into 3/4" strips; twist strips and arrange spiral fashion over fruit, moistening ends and pinching together to make a continuous spiral. Bake at 400 on lowest rack of oven for 35-40 minutes or until pastry is golden. Cool. Serve with whipped cream if you wish.
