2 (10 oz.) packages frozen chopped broccoli
2 (14.5 oz.) cans chicken broth
1/4 butter
1 medium onion, chopped
2 cloves garlic, minced or pressed
1/3 cup flour
1 1/3 cups milk
1/2 lb. Velveeta
1 cup shredded cheddar cheese

In a 6 qt. dutch oven or stock pot over medium high heat, bring chicken broth to a boil; add broccoli. Reduce heat; simmer until broccoli is tender. While broccoli is simmering, melt butter in a medium skillet over medium heat. Add onions and garlic, saute until transparent and tender. Add flour, stirring until bubbly. Slowly add milk, stirring constantly to prevent lumps. Cook and stir until thick. Add this mixture to the broccoli, stirring well. Add Velveeta and cheddar cheese, stir until well blended. Heat until cheese is completely melted. DO NOT BOIL.
