This recipe for Better Baking Mix, by Mary Gibbs, is from A Taste of the Spirit - Book II,

2 1/4 c. unbleached all purpose flour 2 1/4 c. whole wheat flour 2 1/4 c. oat flour (make this by putting oat meal in your blender) 1 1/4 c. non-fat dry milk 3 T. baking powder 1 1/2 tsp. salt (light) 1 tsp. soda
Mix all this together. (Makes about 8 cups.) Store in container with tight fitting lid, date it and store in freezer. Keeps up to 6 months.
This can be used in muffins, pancakes, banana bread, scones, etc. I use it to make biscuits (When I do I add a bit more baking powder.)
