2 Eggs per person
1 Slice of American cheese per egg (you can substitute with any cheese)
Milk, Salt, Pepper

Directions:
Directions:
Place eggs in bowl and (Optional) add a splash of milk, whip with a fork.
Rip the cheese into strips and add to the egg mixture and blend into the egg mixture
Heat your pan on medium
One pan is heated add a pat of butter to grease the pan.
Now add the egg and cheese mixture to the pan
Now this is the trick...
Once the egg mixture is in the pan you need to continue to stir the mixture while it cooks. This will make the eggs airy plus it keeps the eggs from burning.
Once the eggs are at the consistency that you like plate the eggs. Salt and pepper to taste
