4 medium zucchini
1/2 lb. sausage
1 onion
1 carrot
1 c. bread crumbs
1/2 c. grated cheese
1 egg
garlic powder
salt and pepper
Parmesan cheese

Directions:
Directions:
Slice Zucchini in half lengthwise and cook in boiling water until tender. Scoop out and save centers. Brown sausage, drain, and return to skillet. Add chopped onion and grated carrot; cook until tender. Stir in zucchini from centers, crumbs, egg and seasonings. Fill shells and top with Parmesan cheese. Bake at 350 for 25 minutes.
