2-3 lbs. beef brisket
1 1/2 tsp. salt
1/2 tsp. black pepper
3/4 c. luscious oven barbecue sauce (see below)
2 T. yellow mustard
3 T. brown sugar
1 bay leaf
1 small onion, thinly sliced
Fresh spinach leaves
Sliced tomatoes

Directions:
Directions:
Sprinkle beef with salt and pepper. Place in a 8 by 13 by 3 inch roasting pan. Pour barbecue sauce over beef. Sprinkle brown sugar over and add bay leaf. Place onion around beef. Bake, covered, in 325º oven for 3 hours. Remove brisket from roaster. Garnish with fresh spinach leaves and tomatoes. Slice and serve. Variation: make with round stand and cook in 325º oven for 1 1/2 hours or use chuck roast and cook in 325º oven 3 hours.

Luscious oven barbecue sauce
1/2 c. vegetable oil
3 T. white vinegar
1/2 tsp. salt
1 tsp. sugar
1/2 tsp. dry mustard
1/4 tsp. onion salt
1/4 tsp. paprika
1/4 tsp. dried oregano
2 tsp. garlic powder
1 T. finely chopped red bell pepper
1 T. liquid smoke
2 T. Worcestershire sauce
Combine ingredients in a 1 cup container with a tight lid. Mikes about 3/4 cup.
