1 whole roasting chicken (3 pounds)
1 large lemon
Salt and Pepper to taste

Directions:
Preheat oven 375 With meat fork, pierce lemon 20-30 times. Set aside keeping any juice that leaks out. Rinse chicken. Remove and discard fat. Place lemon and juice in cavity of chicken. Close chicken. Season. Place chicken in pan. Roast for 70 minutes. Remove from oven. Let stand on platter (on the breast) covered for 10-15 minutes. (This will make it juicier) Slice to serve.
