2 1/2 pounds (about 12 medium size) cucumbers
2 pounds (medium size) onions
1 pound green peppers

1/3 cup pickling salt
6 quarts water

5 cups sugar
5 cups vinegar (5% acidic)
2 cups water
2 teaspoons celery seed
2 - 4 teaspoons mustard seed
1 1/2 teaspoons turmeric

Directions:
Directions:
Wash and grind (skin and all) and put into a large kettle:
2 1/2 pounds cucumbers
2 pounds onions
1 pound green peppers

Mix together and pour over vegetables:
1/3 cup pickling salt
6 quarts water
Let stand 3 hours then drain

Mix together in the large kettle:
5 cups sugar
5 cups vinegar
2 cups water
2 teaspoons celery seed
2 - 4 teaspoons mustard seed
1 1/2 teaspoons turmeric
Boil for 2 to 3 minutes. Add drained vegetables. Boil until vegetables are clear.
Fill jars. Cold pack jars 5 minutes to seal.
