2 C. all purpose flour
1 1/4 C. quick cooking rolled oats
3/4 C. brown sugar
1 C. butter
12 oz. cream cheese, softened
1/2 C. granulated sugar
2 large eggs, or 3 medium
2 tsp. lemon juice
1 tsp. vanilla
16 oz. Raspberry pie filling
Whipped cream to top

Preheat oven to 350. Butter a 9x13 baking pan. In a large bowl stir together flour, oats, and brown sugar. Using a mixer or your hands, add 1 C. butter. Blend until mixture resembles coarse crumbs. Reserve 1 1/2 C. of the crumb mixture. Press remaining mixture in bottom of prepared baking pan. Bake 15 min. Using an electric mixer, in a medium bowl, beat cream cheese and granulated sugar until light and fluffy. Beat in eggs, lemon juice and vanilla. Spread cream cheese mixture over cooled, baked crust. Spoon raspberry pie filling over cream cheese layer. Sprinkle with reserved crumbs. Bake 30 min. or until set. Cut into bars and serve with whipped cream on top.
