1 C. chopped onion
1 C. diced celery
2 C. finely diced potatoes
2 cans clams
3/4 C. butter
3/4 C. flour
1 1/2 tsp. salt
1 qt. half and half
2 T. red wine vinegar
dash pepper

Directions:
Directions:
Pour clam juice over vegetables, add water to barely cover, simmer until tender. In a separate pan, melt butter,add flour, add cream. Stir with wire whip until smooth and thick. Add undrained vegetables, clams and vinegar. Heat. Do not boil after clams are in.

I usually double this recipe and serve in bread bowls. The red wine vinegar is the secret ingredient.
