6 boneless skinless chicken breast halves
1/4 tsp. pepper
2 Tbsp. vegetable oil
1 cup sliced fresh mushrooms (I used more)
1/4 cup butter or margarine
4 1/2 tsp all purpose flour
1 cup milk
3/4 cup grated Parmesan cheese, divided

Hot cooked noodles

Directions:
Sprinkle chicken with pepper. In a large skillet over medium heat, brown chicken in oil until juices run clear. Remove to a serving platter and keep warm. In the same skillet, saute mushrooms in butter until tender. Sprinkle with flour, stir until coated. Gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened.. remove from the heat; stir in 1/2 Parmesan cheese. Pour over chicken. Sprinkle the rest of the cheese. Serve with hot noodles. Heats well in microwave for the next day if you have some left.
