3/4 cup teriyaki sauce
2 T soy sauce
2 T firmly packed brown sugar
1 T Sherry or white wine
1 T rice vinegar
1 T vegetable oil
1 tsp Asian sesame oil
1 garlic clove, minced
1 1-inch piece fresh ginger, peeled and finely chopped
2 scallions, finely chopped
pinch red pepper flakes, or to taste
4 8oz tuna or swordfish steaks

Directions:
In a large shallow dish stir together all ingredients except fish until combined well and add fish. Marinate fish, covered and chilled, turning occasionally, at least 1 hour and up to 2. Prepare grill. Grill fish on an oiled rack about 5 minutes on each side for medium-rare, or until desired doneness.
