2 medium cucumbers, thinly sliced
1/2 red onion, thinly sliced
10 fresh mint leaves, chopped
1 cup plain yogurt
1 teaspoon red wine vinegar
1 teaspoon extra virgin olive oil

Directions:
Directions:
Prepare the cucumber, onion and mint. Pour the yogurt into a large bowl. Stir in the red wine vinegar and olive oil. Add the red onion, cucumbers and mint and toss together with a sprinkling of salt and pepper. Chill the salad until you're ready to eat.
